Ingredients:

  • 8 ounces of elbow macaroni (or any pasta of your choice)
  • 2 cups of shredded sharp cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 3 cups of milk
  • 1/4 cup of butter
  • 2 1/2 tablespoons of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of ground mustard (optional)
  • 1/4 teaspoon of paprika (optional)
  • Bread crumbs for topping (optional)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to the package instructions until al dente.
    • Drain the pasta and set it aside.
  2. Make the Cheese Sauce:
    • In a separate pot, melt the butter over medium heat.
    • Stir in the flour, salt, pepper, and optional mustard and paprika. Cook for about 2 minutes, stirring constantly to form a roux.
    • Gradually whisk in the milk, and cook over medium heat until the mixture thickens and starts to bubble.
    • Reduce the heat to low and add the cheddar and Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
  3. Combine Pasta and Cheese Sauce:
    • Add the cooked pasta to the cheese sauce and stir until the pasta is well coated.
    • If the sauce seems too thick, you can add a little more milk to reach your desired consistency.
  4. Bake (Optional):
    • Preheat your oven to 350°F (175°C).
    • Transfer the mac and cheese to a baking dish.
    • Sprinkle bread crumbs on top for a crunchy crust.
    • Bake for about 20-30 minutes or until the top is golden brown and bubbly.
  5. Serve:
    • Serve hot as a main dish or a side.
