Cottage Cheese Egg Bake

  • 6 large eggs

  • 1 cup cottage cheese

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup milk

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder (optional)

  • 1 cup chopped spinach or cooked broccoli (optional)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, whisk eggs, cottage cheese, milk, salt, pepper, and garlic powder.

  3. Stir in cheddar cheese and spinach/broccoli if using.

  4. Pour the mixture into a greased 8×8-inch baking dish.

  5. Bake for 35–40 minutes, or until the center is set and the top is golden.

  6. Let it cool for 5 minutes before slicing. Enjoy warm!
