French Onion Meatloaf: A Comfort Food Classic with a Gourmet Twist

  • 2 medium onions, sliced
  • 1/2 cup beef broth
  • 1 cup breadcrumbs (plain or Italian)
  • 1 large egg
  • 1 packet of French onion soup mix
  • 1 cup shredded Gruyère or Swiss cheese
  • Fresh parsley, chopped (for garnish)
  • 2 tablespoons butter (for caramelizing onions)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Caramelize the Onions: In a skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Set aside a small portion for topping.
  3. Mix Ingredients: In a large bowl, combine the ground beef, caramelized onions (reserving some for the top), breadcrumbs, beef broth, egg, and the packet of French onion soup mix. Mix gently until just combined. Avoid overmixing to keep the meatloaf tender.
  4. Shape the Meatloaf: Form the mixture into a loaf shape and place it into a greased loaf pan or on a baking sheet lined with parchment paper.
  5. Add Cheese: Make a small well in the center of the loaf and sprinkle half of the shredded cheese into the well. Cover the top with the remaining cheese and spread the reserved caramelized onions over the top.
  6. Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. Rest & Serve: Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps retain its juiciness. Garnish with chopped fresh parsley before serving.

  • Caramelizing Onions: Take your time with this step. Slow-cooked onions bring out their natural sweetness and add depth to the dish.
