Veggie Tortilla Rollups

Ingredients

  • 4 large flour tortillas

  • 8 oz cream cheese, softened

  • 1/2 cup shredded carrots

  • 1/2 cup diced cucumber

  • 1/2 cup finely chopped bell peppers (any color)

  • 1/4 cup chopped spinach

  • 1/4 cup shredded cheddar cheese

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

Instructions

  • In a bowl, mix cream cheese, garlic powder, salt, and pepper until creamy.

  • Spread a thin layer of the cream cheese mixture over each tortilla.

  • Sprinkle the carrots, cucumber, bell peppers, spinach, and cheddar cheese evenly.

  • Roll up the tortillas tightly.

  • Slice each roll into 1-inch pieces.

  • Chill for 20 minutes before serving for best flavor!

Notes

Feel free to add hummus or a slice of turkey if you want to mix it up!
