Ingredients

Scale
  • 2 lb hot breakfast sausage

  • 1 (30-32 oz) bag frozen tater tots

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1½ cups shredded cheddar cheese

  • 1/2 cup mozzarella cheese

  • 8 large eggs

  • 2 cups milk

Instructions

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish.

  • In a large skillet, cook sausage over medium heat until fully browned. Drain excess fat.

  • In a large bowl, combine the cooked sausage, tater tots, cheddar, and mozzarella cheese. Transfer to your baking dish.

  • In another bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder. Pour this mixture evenly over the tater tot mixture.

  • Want to make it ahead? Cover and refrigerate at this step.

  • Bake uncovered for 60–70 minutes, or until the eggs are set and the top is golden brown.

  • Let rest 5–10 minutes before serving.

Notes

  • Use hot breakfast sausage for extra flavor, or substitute with mild sausage if preferred.
  • For a crispier top, broil for 1-2 minutes after baking (watch closely!).
  • Let the casserole rest 5-10 minutes before slicing for cleaner cuts.
  • Customize it! Add diced bell peppers, mushrooms, or spinach for extra veggies.
