These Strawberry Brownies are a delicious, easy dessert made with a strawberry cake mix and just a few simple ingredients. They’re soft, chewy, and topped with a sweet strawberry glaze for the perfect treat!

For the Brownies:

  • 1 box (15.25 oz) strawberry cake mix (Pillsbury recommended)
  • 2 large eggs
  • ⅓ cup (80 ml) vegetable or canola oil
  • 1 tsp (5 ml) vanilla extract

For the Glaze:

  • ¾ cup (90gpowdered sugar
  • 2 tbsp (40gstrawberry preserves (Bonne Maman recommended)
  • 1½ tbsp (22 ml) milk
  • 1 tbsp (15gcream cheese (optional, for extra richness)

Instructions

1. Preheat & Prepare Pan:

  • Preheat oven to 350°F (175°C).
  • Lightly grease an 8×8-inch baking dish with nonstick spray or line it with parchment paper.

2. Mix & Bake Brownies:

  • In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Mix until well combined.
  • Spread the batter evenly into the prepared pan.
  • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the brownies cool completely before frosting.

3. Make the Strawberry Glaze:

  • In a small bowl, whisk together the powdered sugar, strawberry preserves, milk, and cream cheese (if using) until smooth.
  • Spread the glaze evenly over the cooled brownies.

4. Slice & Serve:

  • Cut into 16 squares and enjoy!

Notes

  • For extra strawberry flavor, add ½ cup of chopped fresh strawberries to the batter.
  • If you don’t have strawberry preserves, you can use raspberry or any other fruit jam.
  • Let the brownies cool completely before frosting to prevent the glaze from melting.
  • For a thicker frosting, add more powdered sugar. For a thinner glaze, add a little more milk.
