Ultimate Chicken Broccoli Rice Casserole: A Comforting Family Favorite

chicken broccoli rice casserole

This recipe takes me back to Sunday dinners at Grandma’s house—the warmth of the oven, the smell of bubbling cheese, and laughter around the table. It’s hearty, simple, and made with love. If you’re looking for a comforting dish that feeds the soul (and the whole family), this creamy casserole is a must-try.

Ingredients

  • 2 cups cooked chicken (shredded or chopped)

  • 2 cups cooked rice (white or brown)

  • 2 cups broccoli florets (steamed or blanched)

  • 1 can (10.5 oz) cream of chicken soup

  • ½ cup sour cream or plain Greek yogurt

  • 1 cup shredded cheddar cheese

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • ½ cup breadcrumbs or crushed crackers (optional topping)

  • 1 tbsp melted butter (for topping)

Instructions

  • Preheat oven to 375°F (190°C).

  • In a large bowl, mix the cooked chicken, rice, broccoli, soup, sour cream, cheese, garlic powder, salt, and pepper.

  • Spoon mixture into a greased 9×13 inch baking dish and spread evenly.

  • If using a topping, mix breadcrumbs or crackers with melted butter and sprinkle over the top.

  • Bake for 25–30 minutes, or until hot and bubbly.

  • Let sit for 5 minutes before serving.

Notes

  • Use rotisserie chicken for a time-saver.

  • Add a pinch of paprika or onion powder for extra flavor.

  • You can freeze it before baking—just thaw overnight in the fridge and bake when ready.

  • Swap in cauliflower rice for a lower-carb version.
