Tuscan Salmon with Parmesan Cream Sauce

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 salmon fillets (skin-on or skinless)
  • Salt and pepper (to taste)
  • 2 cloves garlic (minced)
  • 34 sun-dried tomatoes (packed in oil, sliced)
  • ½ cup (125ml) dry white wine
  • 1 cup (250ml) heavy cream (double cream)
  • ½ cup (50g) grated Parmesan cheese
  • 1 cup (30g) fresh spinach

Instructions

  1. Sear the Salmon:
    • Pat the salmon fillets dry with a paper towel to remove excess moisture. Season both sides with salt and pepper.
    • Heat olive oil and butter in a large skillet over medium-high heat.
    • Place salmon in the pan (skin-side down if using skin-on) and sear for 3-4 minutes until golden and crispy. Flip and cook for another 2-3 minutes (salmon should still be slightly undercooked in the center). Remove salmon from the pan and set aside.
  2. Make the Sauce:
    • In the same pan, add minced garlic and sun-dried tomatoes. Sauté for 30 seconds over low heat.
    • Pour in white wine, scraping up any browned bits from the pan. Simmer for 5 minutes until reduced by half.
    • Stir in heavy cream and Parmesan cheese until smooth and slightly thickened.
    • Add spinach and cook until just wilted (about 1 minute).
  3. Finish Cooking the Salmon:
    • Return the salmon to the pan, spooning the sauce over the fillets. Simmer on low heat for 3-5 minutes until the salmon is fully cooked and flakes easily.
    • Taste and adjust seasoning with salt if needed.
  4. Serve:
    • Plate the salmon and drizzle generously with the creamy Parmesan sauce. Garnish with extra Parmesan if desired.
