1 lb ground beef or sausage (or half of each for flavor mix)
1 (10 oz) can Rotel diced tomatoes with green chilies (undrained)
1 (16 oz) block Velveeta cheese, cubed
Brown the Meat:
In a large skillet, cook ground beef or sausage over medium heat until fully browned. Drain excess grease.
Add Rotel and Cheese:
Stir in the can of Rotel (with juices) and the cubed Velveeta. Reduce heat to low.
Melt & Combine:
Stir frequently until cheese is completely melted and everything is smooth and creamy—about 5–7 minutes.
Serve Hot:
Pour into a serving bowl or small crockpot to keep warm. Serve with tortilla chips, pretzels, or veggie sticks.
