The Ultimate Rotel Dip Recipe: Easy, Cheesy, and Irresistible!

Rotel Dip

Creamy, cheesy, spicy, and irresistibly scoopable—Rotel Dip is a Southern party favorite made with just 3 ingredients! It’s perfect for game day, potlucks, or movie nights and comes together in under 15 minutes.

Ingredients

Scale
  • 1 lb ground beef or sausage (or half of each for flavor mix)

  • 1 (10 oz) can Rotel diced tomatoes with green chilies (undrained)

  • 1 (16 oz) block Velveeta cheese, cubed

Instructions

  1. Brown the Meat:
In a large skillet, cook ground beef or sausage over medium heat until fully browned. Drain excess grease.

  2. Add Rotel and Cheese:
Stir in the can of Rotel (with juices) and the cubed Velveeta. Reduce heat to low.

  3. Melt & Combine:
Stir frequently until cheese is completely melted and everything is smooth and creamy—about 5–7 minutes.

  4. Serve Hot:
Pour into a serving bowl or small crockpot to keep warm. Serve with tortilla chips, pretzels, or veggie sticks.

Notes

  • Want it spicier? Use Hot Rotel or add diced jalapeños.

  • Creamier version: Add ½ cup milk or 4 oz cream cheese.

  • Add-ins: Try chopped green onion, black beans, or corn for extra texture.

  • Meatless option: Skip the meat and just melt Rotel + Velveeta for a 2-ingredient version.
