Growing up, nothing felt more comforting than the smell of grilled cheese sizzling on the pan. My grandmother used to add a Southern twist with her homemade pimento cheese, making each bite rich, creamy, and unforgettable. I’ve recreated that nostalgic flavor with this easy Pimento Grilled Cheese recipe – perfect for lunch or a cozy evening snack. Try it once, and you’ll want to share it with everyone you love!
4 slices of your favorite bread (white or sourdough works great)
4 tablespoons butter, softened
1 cup shredded sharp cheddar cheese
1/4 cup mayonnaise
1/4 cup diced pimentos (drained)
1/4 teaspoon garlic powder
Pinch of black pepper
Make the Pimento Cheese: In a bowl, mix shredded cheddar, mayonnaise, pimentos, garlic powder, and pepper until well blended.
Assemble the Sandwich: Spread butter on one side of each bread slice. On the unbuttered side, spread a generous amount of the pimento cheese. Top with another slice of bread, buttered side out.
Grill It: Heat a skillet over medium heat. Grill sandwiches until golden brown on both sides and the cheese is melted – about 3-4 minutes per side.
Serve Warm: Let cool for a minute, slice in half, and enjoy the melty goodness!
Use freshly grated cheddar for best flavor and melt.
Add a slice of tomato or crispy bacon for extra flavor.
Keep the heat on medium to avoid burning the bread.
