Garlic Bread Rolls

Garlic bread rolls are the perfect combination of soft, fluffy dinner rolls and the rich, savory flavor of garlic. These homemade rolls are infused with fresh garlic in the dough and topped with a generous brushing of garlic herb butter after baking. For the Rolls:

  • 4 1/2 tablespoons (60 g) unsalted butter

  • 1 tablespoon (15 g) granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup (225 g) whole or 2% milk, warmed to 110°F
  • 1 large egg, room temperature
  • 1 beaten egg (for brushing the tops)

For the Garlic Butter:

  • 2 tablespoons (28 g) unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt (for finishing)

Instructions

  1. Prepare the Pan:
    • Lightly butter a 9×13-inch baking pan and set it aside.
  2. Make the Garlic Butter for the Dough:
    • In a small pot, melt 4 1/2 tablespoons of butter. Add 2 tablespoons of minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and let cool.
  3. Make the Dough:
    • In a stand mixer bowl, combine flour, parsley, sugar, yeast, and salt. Add the warmed milk, egg, and cooled garlic butter. Knead on low speed with a dough hook for 10-12 minutes until the dough is smooth and slightly tacky. Add a tablespoon of flour at a time if the dough is too sticky.
  4. Shape the Rolls:
    • Divide the dough into 12 equal portions (about 67 grams each). Shape each piece into a smooth ball, pinching the bottom to seal. Place the rolls in the prepared pan, cover with plastic wrap or a kitchen towel, and let rise in a warm place for 1-2 hours until doubled in size.
  5. Bake the Rolls:
    • Preheat the oven to 350°F (180°C). Brush the tops of the rolls with the beaten egg. Bake for 20-30 minutes until golden brown.
  6. Make the Garlic Butter Topping:
    • While the rolls bake, melt 2 tablespoons of butter in a pot. Add 1 tablespoon of minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in 1 tablespoon of chopped parsley.
  7. Finish the Rolls:
    • As soon as the rolls come out of the oven, brush them generously with the garlic butter topping. Sprinkle with flaky sea salt if desired. Serve warm!
