1 tbsp butter
2 large onions, thinly sliced
1 tsp sugar
Salt to taste
8 oz Brie cheese, rind removed and cubed
4 oz cream cheese, softened
¼ cup sour cream
1 tsp fresh thyme (optional)
Crackers, baguette slices, or veggies for serving
In a skillet, melt butter over medium-low heat. Add onions, sugar, and a pinch of salt. Cook slowly for 25–30 mins, stirring often, until deep golden and caramelized.
Preheat oven to 375°F (190°C).
In a bowl, mix Brie, cream cheese, sour cream, and thyme. Stir in caramelized onions.
Transfer to a small baking dish and bake for 15–20 mins until bubbly and golden on top.
Serve warm with your favorite dippers.
For a shortcut, caramelize onions in advance and store in the fridge.
