4 slices of thick white bread or sourdough
½ lb ground beef (80/20)
4 slices of cooked bacon
4 slices of cheddar cheese
4 slices of mozzarella or American cheese
1 small onion, finely chopped (optional)
2 tablespoons butter
Salt and pepper to taste
Optional: Pickles, ketchup, mustard
Prepare the Beef Patties
Season ground beef with salt and pepper. Form into two thin patties. Cook in a skillet over medium heat until browned and cooked through, about 3–4 minutes per side.
Cook the Bacon
Cook bacon in the same skillet until crispy. Set aside on paper towels.
Assemble the Sandwich
Butter one side of each bread slice. On the unbuttered side, layer cheddar, beef patty, bacon, and mozzarella. Top with another slice of bread (buttered side out).
Grill the Sandwich
In a clean skillet, grill the sandwich over medium heat until golden brown and crispy on both sides, about 3–4 minutes per side, until the cheese is fully melted.
