Easy One-Pot Teriyaki Noodles Recipe

This easy vegetarian meal is made with fresh veggies, noodles, and a simple homemade teriyaki sauce—all cooked in one pot! Perfect as a meatless main dish or as a side with teriyaki chicken. Quick, flavorful, and family-friendly!

Ingredients

Scale
  • ½ green cabbage, shredded
  • 2 carrots, shredded
  • 1 tsp olive oil
  • ⅔ cup soy sauce
  • ½ cup brown sugar
  • ½ tsp ground mustard
  • 1 tsp ground ginger
  • ½ tsp garlic powder
  • 16 oz spaghetti (1 lb box)
  • 3 ½ cups water
  • 1 tbsp sesame seeds

Instructions

1️⃣ Sauté Vegetables: Heat a large pot over medium-high heat. Add oil, cabbage, and carrots. Sauté for 5 minutes until slightly tender.

2️⃣ Add Sauce & Noodles: Stir in soy sauce, brown sugar, mustard, ginger, and garlic. Add spaghetti (break in half if preferred) and water.

3️⃣ Cook Noodles: Simmer uncovered for 15-18 minutes, stirring occasionally. Once noodles soften, stir more frequently to prevent sticking.

4️⃣ Finish & Serve: Remove from heat, mix in sesame seeds. Garnish with extra sesame seeds or green onions. Serve hot!

Notes

  • Water Adjustment: If noodles aren’t cooked but water is low, add ½ cup more water and continue cooking.
  • Cabbage Swap: Substitute green cabbage with napa cabbage for a milder taste.
  • Reheating: Add a splash of water before microwaving leftovers to keep noodles moist.
