For the oats:
1/2 cup rolled oats
1/2 ripe banana
1/4 cup milk (dairy or non-dairy)
1 scoop vanilla or strawberry protein powder
1 tbsp maple syrup or honey
1/2 tsp baking powder
1/2 tsp vanilla extract
Pinch of salt
Filling:
1 tbsp strawberry jam (low sugar if preferred)
Topping:
1 tbsp Greek yogurt (optional)
1 tsp powdered sugar or crushed freeze-dried strawberries for garnish
Preheat oven to 350°F (175°C).
Blend oats, banana, milk, protein powder, syrup, baking powder, vanilla, and salt until smooth.
Pour half the mixture into a small greased ramekin or oven-safe bowl.
Add the strawberry jam in the center, then cover with the remaining oat mix.
Bake for 20–25 minutes, until set and golden.
Let it cool slightly, then top with yogurt and a sprinkle of sugar or berries.
Want it extra sweet? Add a few white chocolate chips inside.
No protein powder? Sub with 1 tbsp almond flour or skip and enjoy it as-is.
