Strawberry Pop Tart Protein Baked Oats

For the oats:

  • 1/2 cup rolled oats

  • 1/2 ripe banana

  • 1/4 cup milk (dairy or non-dairy)

  • 1 scoop vanilla or strawberry protein powder

  • 1 tbsp maple syrup or honey

  • 1/2 tsp baking powder

  • 1/2 tsp vanilla extract

  • Pinch of salt

Filling:

  • 1 tbsp strawberry jam (low sugar if preferred)

Topping:

  • 1 tbsp Greek yogurt (optional)

  • 1 tsp powdered sugar or crushed freeze-dried strawberries for garnish

Instructions

  • Preheat oven to 350°F (175°C).

  • Blend oats, banana, milk, protein powder, syrup, baking powder, vanilla, and salt until smooth.

  • Pour half the mixture into a small greased ramekin or oven-safe bowl.

  • Add the strawberry jam in the center, then cover with the remaining oat mix.

  • Bake for 20–25 minutes, until set and golden.

  • Let it cool slightly, then top with yogurt and a sprinkle of sugar or berries.

Notes

  • Want it extra sweet? Add a few white chocolate chips inside.

  • No protein powder? Sub with 1 tbsp almond flour or skip and enjoy it as-is.

  • Great for meal prep—make 2–3 at once and refrigerate.
