  • 3 cups low-sodium beef broth
  • 1 large yellow onion, quartered
  • 2 medium carrots, peeled & cut into 12 inch chunks
  • 12 small red potatoes
  • ½ head green cabbage, cut into wedges

Instructions

  1. Prep the Corned Beef:
    • Unwrap the corned beef and place it in the slow cooker, fat side up.
    • Sprinkle the spice packet over the top.
  2. Add Liquid:
    • Pour the beef broth around the corned beef.
  3. Cook the Beef:
    • Cover and cook on LOW for 5 hours.
  4. Add Vegetables:
    • After 5 hours, add the onions, carrots, and potatoes.
    • Cover and cook on LOW for 1 more hour.
  5. Add Cabbage:
    • Place the cabbage wedges on top.
    • Cover and cook on LOW for 2 more hours.
