  • 1 lb (450g) smoked sausage or kielbasa, sliced
  • 1 bag (32 oz/900g) frozen diced hash brown potatoes
  • 1 can (10.5 oz/300g) cream of chicken soup
  • 1 cup (240g) sour cream
  • 2 cups (200g) shredded cheddar cheese, divided
  • ½ cup (50g) chopped onion
  • ¼ cup (60ml) milk
  • Salt & pepper, to taste
  • Optional garnish: Fresh parsley or green onions

Instructions

  1. Prep Ingredients:
    • Slice sausage into bite-sized pieces.
    • Dice onion (if using fresh).
  2. Mix Sauce:
    • In a large bowl, combine cream of chicken soup, sour cream, milk, 1½ cups cheese, onion, salt, and pepper.
  3. Layer in Slow Cooker:
    • Lightly grease the slow cooker with nonstick spray.
    • Layer half the hash browns, then half the sausage, and half the sauce. Repeat layers.
    • Gently stir to mix slightly (avoid overmixing).
  4. Cook:
    • Cover & cook on LOW 6–8 hours or HIGH 3–4 hours, until potatoes are tender.
  5. Add Cheese Topping:
    • 15 minutes before serving, sprinkle remaining ½ cup cheese on top. Cover until melted.
  6. Serve:
    • Garnish with parsley or green onions. Enjoy hot!
