Ingredients

  • 1 cup plain Greek yogurt (nonfat or low-fat)

  • 4 oz light cream cheese, softened

  • 1 cup chopped red bell pepper

  • 1 cup chopped cucumber (seeds removed)

  • 1/4 cup chopped green onions

  • 1/2 cup shredded reduced-fat cheddar cheese

  • 1 packet ranch seasoning mix (low-sodium if possible)

  • Salt and pepper to taste

Instructions

  • In a large bowl, blend the Greek yogurt and cream cheese until smooth.

  • Stir in the ranch seasoning mix until well combined.

  • Gently fold in the chopped red pepper, cucumber, green onions, and cheddar cheese.

  • Add a pinch of salt and pepper to taste.

  • Chill in the refrigerator for at least 1 hour before serving to let the flavors marry beautifully.

  • Serve with sliced cucumbers, carrot sticks, or whole-grain crackers
