Cooking steak at home doesn’t have to be intimidating! This one-pan skillet steak with roasted asparagus and potatoes is simple, flavorful, and perfect for a restaurant-quality meal at home. The garlic-herb sauce adds a fresh, zesty finish, making every bite delicious.

  • ½ lb baby red potatoes, halved
  • ¼ cup olive oil, divided
  • Salt & black pepper
  • 1 bunch asparagus, cut into pieces
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • lb sirloin or strip steak

Herb Sauce

  • Zest & juice of 1 lemon
  • ¼ cup chopped parsley
  • 2 tbsp chopped mint
  • 1 garlic clove, smashed
  • Salt & black pepper
  • 1 pinch red pepper flakes
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Roast potatoes: Toss potatoes with 2 tbsp oil, salt, and pepper in a skillet. Roast for 15–17 min until tender.
  3. Add asparagus: Drizzle with 1 tbsp oil, roast 12–15 min more. Remove veggies, lower oven to 350°F.
  4. Season steak: Brush with remaining oil, coat with paprika, garlic powder, salt, and pepper.
  5. Sear steak: Cook in skillet 4–5 min per side. Transfer to oven; roast 10–12 min for medium-rare.
  6. Rest steak: Let sit 15 min before slicing.
  7. Make sauce: Whisk lemon, herbs, garlic, pepper flakes, and oil.
  8. Serve: Slice steak, drizzle sauce over everything.
