  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 2 cloves garlic, chopped
  • 2 tbsp tomato paste
  • 4 cups chicken or beef broth, divided
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp butter
  • 1/3 cup sour cream
  • 1 cup frozen peas
  • 1 cup shredded aged white cheddar (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the mashed potatoes: Boil 1.5 lbs of diced potatoes in salted water for 15–20 minutes until tender. Drain, then blend with sour cream, butter, and 2 cups of broth until smooth. Set aside.
  2. Brown the meat: In a large pot, cook beef, onions, and carrots over medium heat until meat is browned (8–10 minutes). Drain excess grease.
  3. Add aromatics: Stir in garlic and tomato paste; cook 1 minute until fragrant.
  4. Simmer the soup: Add remaining 1.5 lbs diced potatoes, 2 cups broth, Worcestershire sauce, rosemary, thyme, and bay leaves. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  5. Thicken the soup: Stir the mashed potato mixture into the pot until combined.
  6. Finish: Remove bay leaves. Add peas and cheese (if using); simmer 2–3 minutes until peas are warm and cheese melts. Season with salt and pepper.

  • Vegetable swaps: Add 1 cup diced celery with the onions, or 1 cup corn with the peas.
