These bite-sized delights combine fluffy pancake coating, savory sausage, and a rich maple dip for a perfect sweet-and-savory treat. Ideal for brunch, appetizers, or on-the-go snacks!

Pancake Sausage Bites

  • 8 raw breakfast sausage patties (or 12 oz raw ground sausage)
  • 1½ cups Bisquick
  • 1 tbsp granulated sugar
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 1 large egg
  • 5 oz milk
  • Canola oil (for frying, about 2 cups)

Maple Dipping Sauce

  • ½ cup pure maple syrup
  • 1 tbsp unsalted butter
  • 2 tbsp heavy whipping cream

Instructions

1. Prepare Sausage Balls

  • Crumble raw sausage patties into a bowl. Roll into 18 small balls (1-inch diameter).
  • Heat a skillet over medium heat. Cook sausage balls for 8–10 minutes, turning often, until browned and cooked through. Drain on paper towels.

2. Make Batter

  • In a bowl, whisk Bisquick, sugar, and cinnamon. Add vanilla, egg, and milk; mix until smooth.

3. Coat & Fry

  • Heat 2 inches of oil in a deep skillet to 350°F.
  • Spear each sausage ball with a toothpick, dip into batter to coat fully, and carefully lower into oil. Fry in batches for 1–1½ minutes until golden. Drain on paper towels.

4. Maple Dipping Sauce

  • Microwave syrup and butter for 45 seconds. Stir until melted, then mix in cream.
  • (Alternatively, heat in a saucepan over low heat for 2–3 minutes.)

Notes

  • Nutrition excludes dipping sauce (adds ~35 kcal per serving).
  • Shortcut: Use pre-cooked sausage; heat balls in skillet for 3–4 minutes.
  • Storage: Keep bites in an airtight container for up to 2 days. Reheat in an air fryer for 3 mins.
