Roasted Drumsticks with Tomatoes

My grandmother used to make the most comforting chicken dishes, and this one brings back all the warmth of her kitchen. Simple, flavorful, and baked to perfection, these roasted drumsticks are surrounded by sweet tomatoes and tender onions. It’s one of those meals that fills your home with love and your plate with flavor. Give it a try for a cozy weeknight dinner!

Ingredients

Scale
  • 3 tablespoons olive oil, divided

  • 1 red onion, cut into 8 wedges

  • 3 cups cherry tomatoes, halved

  • 3 garlic cloves, smashed

  • 6 chicken drumsticks

  • Salt and freshly ground black pepper, to taste

  • 1 teaspoon smoked paprika

Instructions

  • Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with 1 tablespoon olive oil.

  • Spread onion, tomatoes, and garlic evenly in the dish. Drizzle with 1 tablespoon olive oil.

  • Season drumsticks with salt, pepper, and smoked paprika. Place them over the tomato mix and drizzle with remaining olive oil.

  • Roast for 35–40 minutes, or until chicken is golden and cooked through, and tomatoes are soft and juicy.

  • Serve warm and enjoy every bite!

Notes

  • Even Cooking: Make sure the drumsticks are similar in size so they cook evenly.
  • Extra Flavor: Add fresh herbs like rosemary or thyme for an aromatic boost.
  • Crispy Skin: For extra crispy skin, broil for the last 2–3 minutes of cooking.
  • Make It a Meal: Serve with crusty bread, rice, or a simple green salad.
