3 tablespoons olive oil, divided
1 red onion, cut into 8 wedges
3 cups cherry tomatoes, halved
3 garlic cloves, smashed
6 chicken drumsticks
Salt and freshly ground black pepper, to taste
1 teaspoon smoked paprika
Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with 1 tablespoon olive oil.
Spread onion, tomatoes, and garlic evenly in the dish. Drizzle with 1 tablespoon olive oil.
Season drumsticks with salt, pepper, and smoked paprika. Place them over the tomato mix and drizzle with remaining olive oil.
