Instructions

  1. Preheat the Oven:
    Adjust the oven rack to the lower third position. Preheat the oven to 500ºF (260ºC).
  2. Slice the Cauliflower:
    Remove the outer green leaves from the cauliflower heads and trim the stems. Using a large knife, cut each cauliflower in half lengthwise through the center. Cut 1 ½-inch thick steaks from each half. If the head is large, you can carefully cut one more steak from each cut side. Repeat with the second head of cauliflower. Trim any loose florets not connected to the stem. You should end up with 4 to 8 steaks in total. Place them on a rimmed baking sheet.
  3. Prepare the Seasoning:
    In a small bowl, mix together the salt, pepper, garlic powder, and paprika.
  4. Season the Cauliflower:
    Drizzle olive oil evenly over both sides of each cauliflower steak. Sprinkle the seasoning mixture on both sides, using about ¼ teaspoon per side.
  5. Roast the Cauliflower:
    Tightly cover the baking sheet with foil and bake for 5 minutes. Remove the foil and continue roasting for 10 minutes. Carefully flip each steak and roast for another 6 to 8 minutes, or until a golden brown crust forms.
  6. To Serve:
    Transfer the roasted cauliflower steaks to a serving platter and garnish with chopped parsley. Serve with your favorite sauce or a side of grains for a complete meal.
