Pesto Chicken Bake

A delicious low-carb dinner that’s ready in under 30 minutes! Tender chicken breasts topped with garlic, pesto, juicy tomatoes, and melted mozzarella cheese. Perfect for a quick and healthy weeknight meal.

Ingredients

  • 2 lbs (900g) chicken breast, cut into 4 cutlets*
  • 2 tsp minced garlic
  • 4 tbsp pesto (store-bought or homemade)
  • 2 large tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the chicken: Place chicken cutlets in a single layer in a baking dish. Lightly season with salt.
  3. Add toppings:
    • Spread ½ tsp minced garlic over each cutlet.
    • Top each with 1 tbsp pesto, spreading evenly.
    • Add 2-3 tomato slices on top.
    • Sprinkle ¼ cup mozzarella cheese over each cutlet.
  4. Bake for 22-25 minutes, or until chicken reaches 165°F (74°C) internally and juices run clear.
  5. Rest for 5 minutes before serving.

Notes

✔ Even cooking: If chicken breasts are thick, pound them to an even thickness or butterfly them.
✔ Extra flavor: Use homemade pesto (try my Sunflower Seed Basil Pesto) for a fresher taste.
✔ Crispier cheese: Broil for 1-2 minutes at the end for a golden top.
✔ Storage: Keeps well in the fridge for 3 days. Reheat in the oven or microwave.
