  • 23 peaches, cut into thin wedges
  • ½ cup fresh basil leaves (torn or whole)

  • ¼ cup extra virgin olive oil
  • 3 tbsp champagne vinegar (or white wine vinegar)
  • 3 tbsp honey
  • 1 tbsp fig preserves (optional, for extra sweetness)
  • 2 tbsp chopped fresh chives
  • Salt & black pepper, to taste
  • Chili flakes, to taste (optional)

Instructions

  1. Prepare the Salad:

    • Scatter fresh basil leaves and chopped pistachios on top.
  2. Make the Vinaigrette:
