For the Potatoes:

  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan
  • Salt and pepper to taste

For the Green Beans:

  • 1 lb fresh green beans, ends trimmed
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp Parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Set your oven to 425°F. Line a sheet pan with parchment paper or spray with cooking oil for easy cleanup.
  2. Prepare Potatoes: In a medium bowl, toss the potatoes with olive oil, minced garlic, Parmesan, salt, and pepper. Spread them on one-third of the sheet pan and roast for 10-15 minutes.
  3. Prepare Chicken: While the potatoes cook, toss the chicken with olive oil, garlic, Parmesan, breadcrumbs, salt, and pepper in the same bowl. Coat the chicken evenly.
  4. Add Chicken to Pan: Remove the sheet pan from the oven and place the chicken next to the potatoes.
  5. Prepare Green Beans: Toss the green beans with olive oil, garlic, Parmesan (if using), salt, and pepper. Add them to the remaining space on the sheet pan.
  6. Bake: Return the pan to the oven and bake for 25 minutes, or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, broil on high for 4-5 minutes at the end.
