Ingredients

Scale

For the Chicken:

  • 1 1/2 lb chicken breast (about 34 pieces), approx. 1 inch thick
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/3 cup grated Parmesan
  • 1/3 cup breadcrumbs (Italian or plain—add 1 tsp Italian seasoning if using plain)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt

For the Potatoes:

  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan
  • Salt and pepper to taste

For the Green Beans:

  • 1 lb fresh green beans, ends trimmed
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp Parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F. Line a sheet pan with parchment paper or spray with cooking oil for easy cleanup.
  2. Prepare Potatoes: In a medium bowl, toss the potatoes with olive oil, minced garlic, Parmesan, salt, and pepper. Spread the potatoes on one-third of the sheet pan and roast for 10-15 minutes (longer for extra crispiness).
  3. Prepare Chicken: While the potatoes are roasting, toss the chicken breasts with olive oil, minced garlic, Parmesan, breadcrumbs, salt, and pepper in the same bowl. Coat the chicken evenly.
  4. Add Chicken to Pan: Remove the sheet pan from the oven and place the chicken on the pan next to the potatoes.
  5. Prepare Green Beans: In the same bowl, toss the green beans with olive oil, minced garlic, Parmesan (if using), salt, and pepper. Add them to the sheet pan.
  6. Bake: Return the pan to the oven and bake for 25 minutes, or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, broil on high for 4-5 minutes at the end.
  7. Serve: Let the dish cool for a few minutes before serving. Enjoy!

Notes

  1. Chicken Thickness: If your chicken breasts are thicker than 1 inch, consider pounding them slightly or adding 5-10 minutes to the cooking time.
  2. Crispy Potatoes: For extra crispy potatoes, let them roast for the full 15 minutes before adding the chicken and green beans.
  3. Customize Seasonings: Feel free to add herbs like oregano, thyme, or rosemary to the chicken or potatoes for extra flavor.
  4. Use a Rack: For crispier chicken, place a wire rack on the sheet pan to allow air to circulate underneath the chicken.
