No Bake Summer Berry Icebox Cake: The Ultimate Refreshing Dessert

No Bake Summer Berry Icebox Cake

Every summer, my mom would whip up this berry icebox cake when the days got too hot for baking. Layered with fresh berries and soft whipped cream, it was always the star of our backyard picnics. No oven needed—just simple ingredients and sweet memories in every bite. A perfect way to celebrate the sunny days with the people you love.

Ingredients

  • 2 cups heavy whipping cream

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 package graham crackers

  • 2 cups strawberries, sliced

  • 1 cup blueberries

  • 1 cup raspberries

Instructions

  1. In a large bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form.

  2. In a 9×13 dish, spread a thin layer of whipped cream on the bottom.

  3. Add a layer of graham crackers over the cream, breaking them to fit as needed.

  4. Spread another layer of whipped cream over the crackers, then top with a layer of mixed berries.

  5. Repeat the layers—crackers, cream, berries—until all ingredients are used, finishing with a pretty layer of berries on top.

  6. Cover and refrigerate at least 4 hours, or overnight, until the crackers soften into a cake-like texture.

  7. Slice, serve chilled, and enjoy every cool bite!

Notes

  • Use frozen berries if fresh aren’t in season—just thaw and drain them first.

  • Add a layer of lemon zest to the whipped cream for a citrusy kick.

  • Make it in individual cups for fun, portable treats!
