Instructions

  1. Preheat oven to 350°F (175°C). Place the butter in a 9×9-inch baking dish and melt in the oven for 3–4 minutes. Remove from oven.
  2. Make the batter: In a bowl, whisk together flour, baking powder, salt, and sugar. Add buttermilk, vanilla, and lemon extract (if using), mixing until smooth.
  3. Layer the cobbler: Pour the batter evenly over the melted butter (do not stir). Spoon the lemon pie filling or curd on top, spreading gently.
  4. Bake for 45–55 minutes, until puffed and golden at the edges.
  5. Cool slightly (the lemon filling will settle into a pudding-like layer beneath the cobbler).
  6. Serve warm with whipped cream, ice cream, or a dusting of powdered sugar.
