  • 1 cup Kodiak Cakes mix (any flavor)
  • ½ cup old-fashioned oats
  • 1 cup creamy peanut butter
  • ½ cup raw honey
  • 1 teaspoon vanilla extract
  • ¼½ cup mini chocolate chips

Optional Add-Ins:

  • Pinch of salt
  • Pinch of cinnamon
  • 1 tablespoon ground flaxseed
  • 1 tablespoon chia seeds
  • 1 scoop vanilla protein powder
  • ¼ cup Rice Krispies

Instructions

  1. Prepare the Pan: Line a baking sheet with parchment paper and set aside.
  2. Mix Ingredients: In a large bowl, combine the Kodiak Cakes mix, oats, peanut butter, honey, and vanilla extract. Mix well by hand or with a mixer until fully combined.
  3. Add Mix-Ins: Fold in the mini chocolate chips and any optional add-ins (e.g., salt, cinnamon, flaxseed, etc.). Stir until evenly distributed.
  4. Form Balls: Use a small cookie scoop or tablespoon to portion the mixture. Roll into balls and place them on the prepared baking sheet.
  5. Chill: Place the baking sheet in the refrigerator or freezer for 5–10 minutes, or until the balls are firm.
  6. Store: Transfer the protein balls to an airtight container. Store in the fridge for up to 2 weeks or in the freezer for up to 3 months.

Notes

  • Adjust Consistency: If the mixture feels too dry, add a little more peanut butter or honey. If it’s too sticky, add a tablespoon or two of oats or Kodiak Cakes mix.
  • Heat-Treat Flour: If you’re concerned about raw flour, heat-treat the Kodiak Cakes mix by microwaving it in 30-second increments until it reaches 165°F. Let it cool before using.
  • Customize: Experiment with different nut butters (e.g., almond butter) or swap chocolate chips for dried fruit, nuts, or coconut flakes.
