Ingredients

Scale

For the Meatballs:

  • 1 lb (450g) ground beef
  • 1/4 cup almond flour
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste

For the Garlic Butter Sauce:

  • 1/4 cup (4 tbsp) butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (optional, for garnish)
  • Salt, to taste

Instructions

  1. Prepare the Meatballs:
    • In a large mixing bowl, combine the ground beef, almond flour, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
    • Roll the mixture into evenly sized meatballs (about 1-1.5 inches in diameter).
  2. Cook the Meatballs:
    • Heat a large skillet over medium heat. Add the meatballs in a single layer, ensuring they have enough space to cook evenly.
    • Cook for 8-10 minutes, turning occasionally, until the meatballs are browned on all sides and cooked through (internal temperature should reach 160°F/71°C).
    • Remove the meatballs from the skillet and set aside.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant. Be careful not to burn the garlic.
    • Return the cooked meatballs to the skillet and toss them in the garlic butter sauce until evenly coated.
  4. Serve:
    • Garnish with freshly chopped parsley for a pop of color and added freshness.
    • Serve hot as a main dish with a side of cauliflower rice, zucchini noodles, or a fresh salad.

Notes

  • For Extra Flavor: Add a pinch of red pepper flakes to the garlic butter sauce for a subtle kick.
  • Meatball Size: Use a cookie scoop or tablespoon to ensure evenly sized meatballs for consistent cooking.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave.
  • Freezing: Freeze uncooked meatballs on a baking sheet, then transfer to a freezer bag. Cook directly from frozen, adding a few extra minutes to the cooking time.
