For the Meat Filling:

  • 1 lb (450g) lean ground beef (or ground turkey/chicken for a lighter option)
  • 1 packet (1 oz) taco seasoning (or homemade blend: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ¼ tsp garlic powder, ¼ tsp onion powder)
  • ½ cup water

For the Base & Layers:

  • 6 medium flour tortillas (use gluten-free if needed)
  • 1 can (16 oz) refried beans (or black/pinto beans, mashed)
  • 1 can (10 oz) red enchilada sauce (or green enchilada sauce for extra spice)

For the Cheese & Toppings:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese (or mozzarella for milder flavor)
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • ½ cup sliced black olives (optional)
  • Optional extras: jalapeños, avocado, sour cream, cilantro

Instructions

Step 1: Crisp the Tortillas

  • Preheat oven to 375°F (190°C).
  • Lightly spray 2 baking sheets with oil and place 3 tortillas on each.
  • Bake for 3–5 minutes, flip, and bake 2–5 more minutes until golden and crisp. Set aside.

Step 2: Cook the Meat

  • In a skillet, brown the ground beef over medium-high heat (5–7 minutes). Drain excess grease.
  • Stir in taco seasoning + ½ cup water. Simmer for 5–7 minutes until thickened.

Step 3: Warm the Beans

  • Microwave refried beans in a bowl for 1 minute, stirring halfway.

Step 4: Assemble the Pizzas

  1. First Layer: Spread refried beans on a crispy tortilla.
  2. Second Layer: Add 1/3 of the seasoned beef, then top with a second tortilla.
  3. Top Layer: Spread 3 tbsp enchilada sauce, sprinkle cheese, and add tomatoes, onions, olives.

Step 5: Bake & Serve

  • Bake for 5–7 minutes until cheese melts.
  • Cool 2 minutes, slice, and garnish with extra toppings if desired.
