Ingredients

For the pastry:

  • 2 1/2 cups all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1 cup unsalted butter, cold and cubed

  • 6–8 tablespoons ice water

For the filling:

  • 1/2 cup brown sugar

  • 1 tablespoon ground cinnamon

  • 1 tablespoon flour

For the frosting:

  • 1 cup powdered sugar

  • 1 tablespoon milk

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon vanilla extract

Instructions

  • Make the dough: In a bowl, mix flour, sugar, and salt. Cut in the butter until crumbly. Add ice water a tablespoon at a time until dough comes together. Divide into two disks, wrap, and chill for 30 minutes.

  • Prepare the filling: Mix brown sugar, cinnamon, and flour in a small bowl.

  • Assemble the tarts: Roll out dough to 1/8-inch thick. Cut into 3×4-inch rectangles. Place half on a lined baking sheet. Spoon filling in the center, leaving edges clear. Top with remaining rectangles and press edges with a fork to seal.

  • Bake: Preheat oven to 350°F (175°C). Poke tops with a fork and bake for 20–25 minutes until golden brown. Cool completely.

  • Frost: Mix all frosting ingredients and spread over cooled tarts. Let set before serving.

Notes

  • Add a pinch of nutmeg to the filling for an extra warm flavor.

  • Store in an airtight container for 3 days or freeze for longer.

  • Try toasting for that authentic feel—but skip the frosting if using a toaster!
