When my grandkids started school, mornings got a bit hectic. I wanted something warm, homemade, and ready in minutes—and that’s how these Freezer Breakfast Sandwiches became a lifesaver. They’re hearty, delicious, and freezer-friendly. Just heat and go! Try them for yourself—you’ll thank me on your busiest mornings.
6 large eggs
Salt & pepper, to taste
6 English muffins
6 slices sharp cheddar cheese
18 small slices deli ham
Plastic wrap
Preheat oven to 350°F (175°C). Spray a jumbo muffin tin or small ramekins with nonstick spray.
Crack one egg into each cup. Gently pierce the yolk with a knife.
Bake 10–15 minutes until the eggs are set. Let cool slightly, then season with salt & pepper.
Slice English muffins. On each, place a slice of cheddar cheese and 3 ham slices.
Add the baked egg and top with the other muffin half.
Wrap each sandwich tightly in plastic wrap and freeze.
To Reheat:
Unwrap and replace with a paper towel.
Microwave 1 minute at 50% power.
Flip, then microwave 1 more minute on full power.
