When my grandkids started school, mornings got a bit hectic. I wanted something warm, homemade, and ready in minutes—and that’s how these Freezer Breakfast Sandwiches became a lifesaver. They’re hearty, delicious, and freezer-friendly. Just heat and go! Try them for yourself—you’ll thank me on your busiest mornings.

  • 6 large eggs

  • Salt & pepper, to taste

  • 6 English muffins

  • 6 slices sharp cheddar cheese

  • 18 small slices deli ham

  • Plastic wrap

Instructions

  1. Preheat oven to 350°F (175°C). Spray a jumbo muffin tin or small ramekins with nonstick spray.

  2. Crack one egg into each cup. Gently pierce the yolk with a knife.

  3. Bake 10–15 minutes until the eggs are set. Let cool slightly, then season with salt & pepper.

  4. Slice English muffins. On each, place a slice of cheddar cheese and 3 ham slices.

  5. Add the baked egg and top with the other muffin half.

  6. Wrap each sandwich tightly in plastic wrap and freeze.

To Reheat:

  • Unwrap and replace with a paper towel.

  • Microwave 1 minute at 50% power.

  • Flip, then microwave 1 more minute on full power.

Notes

  • Use high-quality deli ham for better flavor.
  • For a healthier option, swap regular English muffins for whole wheat.
  • Customize with turkey bacon, sausage, or veggies like spinach.
