  • 1 tbsp olive oil

  • 1 lb ground beef

  • 1 medium onion, sliced

  • 3 garlic cloves, minced

  • 1 cup bok choy, shredded

  • 1 large carrot, shredded or thinly sliced

  • 9 oz ramen noodles

  • 2 tbsp oyster sauce

  • 2 tbsp hoisin sauce

  • 1 tbsp dark soy sauce

  • 2 tbsp sesame oil

  • 2 tsp rice vinegar

  • 3 green onions, chopped

  • 2 tbsp sesame seeds

Instructions

  • Cook noodles per package directions until al dente. Drain and set aside.

  • Brown the beef: In a hot skillet or wok, heat olive oil and add ground beef. Let it sit for 5 mins without touching — this gives it that rich char. Flip and toss.

  • Add veggies: Stir in onions, garlic, bok choy, and carrots. Sauté just until the carrots soften slightly.

  • Combine: Add cooked noodles and all sauces (oyster, hoisin, soy, vinegar, sesame oil). Toss everything together until evenly coated.

  • Finish: Sprinkle with green onions and sesame seeds. Serve hot!
