When my kids were little, weeknights were always a scramble — something quick, filling, and full of flavor was a must. This Hoisin Beef Noodles recipe became a family favorite because it checked every box. It’s warm, comforting, and tastes like a hug in a bowl. Now I make it when we need a cozy meal in under 30 minutes. Give it a try tonight and add your own twist!
1 tbsp olive oil
1 lb ground beef
1 medium onion, sliced
3 garlic cloves, minced
1 cup bok choy, shredded
1 large carrot, shredded or thinly sliced
9 oz ramen noodles
2 tbsp oyster sauce
2 tbsp hoisin sauce
1 tbsp dark soy sauce
2 tbsp sesame oil
2 tsp rice vinegar
3 green onions, chopped
2 tbsp sesame seeds
Cook noodles per package directions until al dente. Drain and set aside.
Brown the beef: In a hot skillet or wok, heat olive oil and add ground beef. Let it sit for 5 mins without touching — this gives it that rich char. Flip and toss.
Add veggies: Stir in onions, garlic, bok choy, and carrots. Sauté just until the carrots soften slightly.
Combine: Add cooked noodles and all sauces (oyster, hoisin, soy, vinegar, sesame oil). Toss everything together until evenly coated.
Finish: Sprinkle with green onions and sesame seeds. Serve hot!
