High Protein Jalapeño Popper Cheeseburger Bites

Every Sunday, my grandkids and I whip up something fun in the kitchen. Last week, these spicy little bites stole the show! Packed with protein and cheesy goodness, they bring all the flavor of your favorite fast food cheeseburger—without the guilt. Whether you’re meal prepping or looking for a tasty snack, these are a crowd-pleaser!

Ingredients

  • 1 lb lean ground beef

  • ½ cup low fat cheddar

  • ½ cup breadcrumbs

  • 4 jalapeños, seeded and diced

  • 4 egg whites

  • 6 tbsp fat free cream cheese

  • Pinch of salt & pepper

Instructions

  • Preheat oven to 400°F and lightly oil a muffin tin.

  • In a large bowl, mix everything except the cream cheese until fully combined.

  • Fill each muffin cup halfway with the beef mixture.

  • Add ½ tbsp cream cheese to each, then top with more beef mixture to fill.

  • Bake for 20–25 minutes until golden.

  • Let cool 5–10 minutes before serving.

Notes

  • Handle with care: Jalapeños can be spicy! Use gloves while dicing to avoid any skin irritation.

  • Customize the heat: Want it milder? Swap some jalapeños with bell peppers. Like it hotter? Leave in a few seeds!

  • No muffin tin? Use a mini loaf pan or shape them into small patties on a baking sheet.

  • Make ahead: These bites freeze well. Just reheat in the oven or air fryer for a quick, protein-packed snack.

  • Add flavor: A dash of garlic powder or smoked paprika can take the flavor up a notch!
