This Mushroom Stuffed Chicken Breast is a delicious and healthy dinner option, featuring tender chicken breasts stuffed with a savory mix of mushrooms, garlic, spinach, and melted cheese. It’s protein-packed, low-carb, and full of flavor, making it perfect for a weeknight meal or a special occasion.

  • 2 boneless, skinless chicken breasts (7 oz / 200g each)
  • ¾ tsp salt (divided)
  • ¼ tsp black pepper
  • 2 tbsp unsalted butter (or olive oil)
  • 7 oz mushrooms (button or cremini, sliced)
  • 2 garlic cloves (minced)
  • ½ tsp fresh thyme (or ¼ tsp dried)
  • 2 cups fresh baby spinach
  • 3 oz mozzarella cheese (or any melty cheese)
  • 1 tbsp olive oil (for searing)

Instructions

1️⃣ Preheat Oven & Prep Chicken

  • Preheat oven to 390°F (200°C) or 180°C fan-forced.
  • Carefully cut a pocket into each chicken breast (don’t cut all the way through).
  • Season inside and out with ½ tsp salt & pepper.

2️⃣ Cook Mushroom Filling

  • In an oven-safe skillet, melt butter over medium-high heat.
  • Add mushrooms and cook for 3 mins until golden.
  • Stir in garlic, thyme, remaining salt, and pepper. Cook 2 more mins.
  • Add spinach and cook until wilted (30 sec). Remove from heat.

3️⃣ Stuff & Seal Chicken

  • Fill each chicken breast with mushroom mixture and top with cheese.
  • Secure with toothpicks (doesn’t need to be fully sealed).

4️⃣ Sear Chicken

  • Wipe skillet clean, heat olive oil over medium-high heat.
  • Sear chicken 1.5 mins per side until golden.

5️⃣ Bake & Rest

  • Transfer skillet to oven and bake for 15 mins (or until internal temp reaches 165°F / 74°C).
  • Let rest 5 mins before serving (keeps it juicy!).

✔ Use a meat thermometer to avoid overcooking.
✔ Pat chicken dry before seasoning for better browning.
✔ Don’t overcrowd mushrooms when sautéing—cook in batches if needed.
