Instructions

  1. Mix the Dough:
    In a medium bowl, combine almond flour, peanut butter, salt (if needed), maple syrup, and vanilla extract. Stir until a thick, uniform dough forms.
  2. Form the Balls:
    Scoop out tablespoon-sized portions of the dough and roll them into smooth balls. Place them on a parchment-lined tray or plate.
  3. Chill:
    Refrigerate the balls for 30 minutes to firm them up. This makes dipping easier.
  4. Melt the Chocolate:
    In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each, until fully melted and smooth.
  5. Dip the Buckeyes:
    Using a fork or toothpick, dip each ball into the melted chocolate, covering about 2/3 of the ball to leave a small “eye” of peanut butter exposed. Let the excess chocolate drip off, then place the buckeyes back on the tray.
