Ingredients

Scale

Hamburger Steaks:

  • 1.3 pounds ground beef
  • 4 tbsp breadcrumbs
  • 1 medium yellow onion, grated
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp heavy cream
  • 1 egg

Creamy Dill Sauce:

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour
  • ½ cup low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp chopped dill (plus extra for serving)

Instructions

  1. Prepare the Hamburger Steaks:
    • In a large bowl, grate the onion. Add the ground beef, breadcrumbs, salt, pepper, heavy cream, and egg. Mix gently with your hands until just combined.
    • Divide the mixture into 4 equal portions and shape each into a ball. Flatten each ball into a patty about ¾ inch (2 cm) thick. Set aside.
  2. Prep the Sauce Ingredients:
    • Finely chop the onion, mince the garlic, and chop the dill.
  3. Cook the Hamburger Steaks:
    • Heat olive oil and butter in a large nonstick skillet over medium heat. Add the patties and cook for 4-5 minutes per side, or until golden brown. Transfer the cooked patties to a clean plate.
  4. Make the Creamy Dill Sauce:
    • In the same skillet, add the chopped onion and garlic. Cook over low heat for 2 minutes, or until fragrant.
    • Add salt, pepper, and flour. Stir until the flour is incorporated.
    • Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Simmer for 2 minutes.
    • Add the heavy cream and chopped dill. Bring to a boil, then reduce the heat and simmer for 1-2 minutes, or until the sauce thickens.
  5. Finish the Dish:
    • Return the hamburger steaks to the skillet, spooning the sauce over them. Simmer for 5-6 minutes, or until the patties are heated through and no longer pink in the center.
    • Garnish with additional chopped dill and freshly ground black pepper.
  6. Serve:
    • Serve hot with mashed potatoes, rice, or your favorite side dish. Enjoy!

Notes

  1. Don’t overmix the beef: Overmixing can make the patties tough. Mix just until the ingredients are combined.
  2. Use fresh dill: Fresh dill adds a bright, herbaceous flavor to the sauce. If you must use dried dill, reduce the amount to 1 tablespoon.
  3. Adjust thickness: If the sauce is too thick, add a splash of chicken broth to reach your desired consistency.
  4. Rest the patties: Let the cooked patties rest for a few minutes before serving to keep them juicy.
