  • 1 ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 cup Greek yogurt (any flavor, but vanilla adds sweetness)
  • ¼ cup milk (or water)
  • 2 large eggs
  • ½ tsp vanilla extract
  • 2 tbsp melted butter

Instructions

1. Make the Pancake Batter

  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl (or blender), mix the Greek yogurt, milk (or water), eggs, vanilla, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined (a few small lumps are okay—don’t overmix!).

2. Cook the Pancakes

  • Heat a non-stick pan or griddle over medium-high heat. Lightly grease with butter or oil.
  • Pour ¼ cup of batter per pancake onto the pan.
  • Cook for 2 minutes, or until bubbles form on the surface and edges look set.
  • Flip and cook for another 1 minute (avoid pressing down—this keeps them fluffy!).
  • Repeat with remaining batter.

3. Serve

  • Stack high and top with butter, maple syrup, fresh berries, or honey!
