  • 1 lb breakfast sausage
  • 8 oz mild cheddar cheese, thinly sliced

  • ¼ cup flour (for sawmill gravy)
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)

Instructions

  1. Cook the sausage: In a cast-iron skillet, brown the sausage over medium heat until fully cooked. Remove from the pan, leaving about ¼ cup of drippings (add butter if needed).
  2. Make the gravy: To the drippings, add flour and stir for 5-10 minutes until golden. Slowly whisk in milk, stirring constantly until the gravy thickens. Season with salt and pepper.
  3. Toast the muffins: Lightly toast the English muffin halves while the gravy simmers.
  4. Scramble the eggs: In a non-stick pan, scramble the eggs with a splash of milk (if desired) until fluffy.
  5. Assemble & broil:
    • Spread gravy on each muffin half.
    • Top with scrambled eggs, sausage, and a slice of cheese.
    • Place under the broiler (high heat) for 1-2 minutes until the cheese melts and bubbles.
