For Lemon Butter Mixture:

  • 2 tbsp butter (salted, softened)
  • 2 tbsp garlic (freshly minced)
  • 1 tbsp basil (freshly chopped, packed)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • ⅛ tsp kosher salt
  • ¼ tsp black pepper (freshly ground)

For the Fish:

  • 24 tbsp olive oil
  • 4 barramundi fillets (½” thick, 5-6 oz each)
  • Kosher salt & black pepper (to taste)

Optional Garnishes:

  • Fresh basil (chopped)
  • Lemon slices

Instructions

1. Make the Lemon Butter Sauce

  • In a small saucepan, combine butter, garlic, basil, lemon juice, lemon zest, salt, and pepper.
  • Heat over medium-low until bubbly, stirring often. Once melted, remove from heat and keep warm.

2. Prepare the Fish

  • Pat dry the fillets thoroughly with paper towels (this ensures a crispy sear).
  • Lightly season both sides with salt & pepper.

3. Cook the Barramundi

  • Heat 2 tbsp olive oil in a large skillet (preferably cast iron) over high heat until smoking.
  • Carefully add 2 fillets, skin-side down, and cook undisturbed for 3 minutes (don’t move them!).
  • Flip and cook for another 3 minutes until golden and flaky.
  • Transfer to a plate and repeat with remaining fillets.

4. Serve

  • Drizzle the warm lemon butter sauce over the fish.
  • Garnish with fresh basil & lemon slices.
