  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 2 cups uncooked pasta (lasagna noodles broken into pieces, or small pasta like mafalda)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Brown the Meat – In a large pot or Dutch oven, cook the ground beef or sausage over medium heat until browned. Drain excess fat if needed.
  2. Sauté Aromatics – Add the chopped onion and garlic, cooking until soft (about 3-4 minutes).
  3. Simmer the Soup – Stir in crushed tomatoes, beef broth, oregano, basil, red pepper flakes, salt, and pepper. Bring to a boil.
  4. Cook the Pasta – Add the uncooked pasta and simmer for 8-10 minutes (or as per package instructions) until al dente.
  5. Add Creaminess – Remove from heat and stir in ricotta cheese until well blended.
