  • 6 oz shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly spray a 6-cup muffin tin with cooking spray.
  2. Line Muffin Cups:
    • Take 2 slices of ham and arrange them in a criss-cross pattern in each muffin cup, pressing gently to form a cup shape.
    • Place 1 teaspoon of shredded cheddar cheese at the bottom of each ham cup.
  3. Add Eggs:
    • Crack one egg into each ham-lined muffin cup.
    • Sprinkle the remaining shredded cheese evenly over the tops of the eggs.
  4. Bake:
    • Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the eggs reach your desired level of doneness.
  5. Cool and Remove:
    • Once baked, remove the muffin tin from the oven and let the egg cups cool for 2-3 minutes.
    • Run a sharp knife around the edges of each cup to loosen them, then gently lift them out of the tin.
    • Place the egg cups on a paper towel to absorb any excess moisture.
  6. Serve or Store:
    • Serve warm, at room temperature, or chilled.
    • To store, place the egg cups in a single layer in an airtight container and refrigerate for up to 3-4 days. Reheat in the microwave for 5-10 seconds if desired.
