Ingredients

Scale
  • 1 lb baby potatoes, halved
  • ½ lb green beans, trimmed
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 3 tsp fresh thyme
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp pepper
  • 1 quartered boneless ham, sliced
  • 1 (20 oz) can sliced pineapple, drained
  • ¼ cup honey
  • ¼ cup brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard

Instructions

1️⃣ Preheat oven to 450°F and spray a sheet pan with nonstick spray.
2️⃣ Arrange the potatoes on one-third of the pan and green beans in the middle. Drizzle with oil, garlic, thyme, onion powder, salt, and pepper, then stir separately to coat.
3️⃣ On the last third of the pan, alternate layers of ham and pineapple slices.
4️⃣ In a small saucepan, heat honey, brown sugar, vinegar, and Dijon mustard until simmering. Brush the glaze over the ham and pineapple.
5️⃣ Bake for 25-30 minutes or until potatoes are fork-tender. Serve & enjoy!

Notes

  • Use pre-sliced ham or ham steaks to save time.
  • For extra flavor, marinate the potatoes and green beans in the oil and seasoning mixture for 15 minutes before baking.
  • If you prefer a less sweet glaze, reduce the honey and brown sugar by half.
  • Double the recipe for leftovers or a larger crowd.
