Easter Cookies: The Ultimate Spring Baking Recipe for Soft and Chewy Treats

Ingredients

✔ 1½ cups + 1 tbsp all-purpose flour
✔ 1 tsp baking powder
✔ ½ tsp baking soda
✔ ¼ tsp salt
✔ ½ cup unsalted butter, softened
✔ ½ cup granulated sugar
✔ ⅓ cup brown sugar, lightly packed
✔ 1 large egg, cold
✔ 2 tsp pure vanilla extract
✔ ¾ cup pastel M&M’s (+ extra for topping)
✔ ½ cup white chocolate chips (+ extra for topping)
✔ ¼ cup pastel sprinkles

Instructions

1️⃣ Preheat oven to 350°F. Line two baking sheets with parchment paper.
2️⃣ In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3️⃣ In another bowl, beat butter and both sugars until fluffy. Mix in egg and vanilla.
4️⃣ Slowly add the dry ingredients and mix until just combined.
5️⃣ Stir in M&M’s and white chocolate chips. Scoop dough into 1½ – 2½ tbsp portions.
6️⃣ Roll the tops of each dough ball in sprinkles.
7️⃣ Place on baking sheets and bake for 8-11 minutes until edges are set but centers are slightly underdone.
8️⃣ Let cool and, if desired, press extra M&M’s or chocolate chips on top.

Notes

  • Baking time: Adjust based on the size of your dough balls. Smaller cookies may need less time, while larger ones may need more.
  • Storage: Store in an airtight container at room temperature for up to 5 days.
