Easter Chocolate Cookies: A Delicious Treat for the Holiday Season

Easter is all about joy, family, and of course, chocolate! These soft and chewy Easter Chocolate Cookies are the perfect way to celebrate. Packed with double chocolate chunks and topped with Mini Eggs and Malteser Bunnies, they’re a fun and festive treat that will have everyone coming back for more.   • 160g unsalted butter
  • 100g white caster sugar
  • 150g light brown sugar
  • 1 medium egg (room temperature)
  • 1 medium egg yolk (room temperature)
  • 1 tsp vanilla extract
  • 280g self-raising flour
  • ½ tsp salt
  • 200g chocolate (milk, white, or a mix), chopped into chunks
  • 12 Mini Malteser Bunnies
  • 12 Mini Eggs (roughly one sharing bag)

Instructions

Make the Cookie Dough

  1. Chop the butter into small pieces and melt in a microwave-safe bowl for 30-60 seconds.
  2. Add both sugars to the melted butter and mix well with a wooden spoon or spatula.
  3. Stir in the whole egg, egg yolk, and vanilla extract until combined.
  4. Gently fold in the flour and salt until a soft dough forms.
  5. Add the chopped chocolate chunks and mix until evenly distributed.
  6. Cover the bowl with clingfilm and refrigerate for at least 5 hours (or overnight) for best results.

2. Roll and Bake the Cookies

  1. Preheat the oven to 180°C fan (200°C conventional) and line a baking tray with greaseproof paper.
  2. Let the dough sit at room temperature for 30 minutes to soften slightly.
  3. Scoop heaped tablespoons of dough and roll into balls (you should get 12-14 cookies).
  4. Place 3-5 cookie balls on the tray, leaving space for them to spread.
  5. Bake for 10 minutes until the edges are golden but the centers are still soft.
  6. As soon as the cookies come out of the oven, press a Mini Malteser Bunny and a Mini Egg into the top of each cookie.
  7. Let the cookies cool on the tray for 20 minutes to firm up.

3. Serve and Enjoy!

  • Serve with a cup of tea or coffee for the ultimate Easter treat.
  • Store in an airtight container at room temperature for up to 5 days.
