A delicious twist on classic grilled cheese, this Zucchini Grilled Cheese is crispy, cheesy, and packed with veggies! Perfect for a quick lunch or a light dinner.

  • 2 cups grated zucchini (from about 2 medium)
  • 1 large egg
  • 2 scallions, thinly sliced
  • ½ cup finely grated Parmesan
  • ¼ cup cornstarch
  • Kosher salt & black pepper (to taste)
  • 1 Tbsp. extra-virgin olive oil
  • 2 cups shredded cheddar, divided

Instructions

Step 1: Prepare Zucchini Mixture

  • Squeeze excess moisture from grated zucchini using a clean kitchen towel.
  • In a bowl, combine zucchini, egg, scallions, Parmesan, and cornstarch.
  • Season with salt and pepper.

Step 2: Cook Zucchini Patties

  • Heat oil in a large skillet over medium heat.
  • Scoop ¼ cup of zucchini mixture onto the skillet, shaping into small squares.
  • Cook 4 minutes per side until golden. Transfer to paper towels to drain. Repeat with remaining mixture.

Step 3: Assemble & Grill Sandwiches

  • Place 2 zucchini patties in the skillet.
  • Top each with ½ cup cheddar, then another patty to form a sandwich.
  • Cook 2 minutes per side until cheese melts.

Step 4: Serve Warm

  • Transfer to a plate and enjoy immediately!
