Ingredients

Scale
  • 2 pounds shrimp, peeled and deveined
  • 1 English cucumber, small diced
  • 3 green onions, thinly sliced

Creamy Lime Dressing

  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime, zested and juiced (about 2 tsp zest and 2 tbsp juice)
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Make the Dressing:
In a small bowl, whisk together the mayonnaise, sour cream, lime zest, lime juice, dill, Dijon mustard, minced garlic, salt, and pepper. Set aside or refrigerate until ready to use.
  2. Cook the Shrimp:
Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes, until they turn pink and are cooked through.
  3. Prepare an Ice Water Bath:
While the shrimp are cooking, fill a large bowl with ice water. Once the shrimp are done, transfer them to the ice water bath using a skimmer. Let them cool for 3 minutes, then drain in a colander. Chop the shrimp into bite-sized pieces.
  4. Combine Ingredients:
In a large mixing bowl, combine the chopped shrimp, diced cucumber, and sliced green onions. Pour the creamy lime dressing over the mixture and stir until everything is evenly coated.
  5. Serve:
Serve immediately or chill in the fridge for 15-20 minutes for a cooler, more refreshing salad.

Notes

  1. Fresh Ingredients: Use fresh, high-quality shrimp and crisp cucumbers for the best texture and flavor.
  2. Juicy Lime: Opt for a large, juicy lime for the dressing. If using smaller limes, you may need two.
  3. Chill Before Serving: For an extra refreshing taste, let the salad chill in the fridge for 15-20 minutes before serving.
  4. Customize: Add avocado, cherry tomatoes, or a sprinkle of chili flakes for extra flavor and texture.
