1 large onion, sliced
2 sweet bell peppers (red, orange, green, or yellow), seeded & sliced
2–3 stalks broccolini, cut into 1.5-inch pieces (or 1 extra sliced onion)
1 tbsp olive oil
Large pinch of salt
1 lb sweet Italian sausage (chicken or pork)
1 tbsp white wine vinegar
Optional: Sausage buns or orzo for serving
Instructions
Prep Vegetables: In a large bowl, toss onions, peppers, and broccolini with olive oil and salt.
Preheat Air Fryer: With the basket inserted, preheat to 375°F (190°C) for 2-3 minutes.
Cook: Add vegetables to the basket, then layer sausages on top. Air fry for 20-22 minutes, stirring every 5 minutes, until sausages are cooked through and veggies are tender.
Finish: Drizzle with white wine vinegar, toss, and serve on buns, over orzo, or as desired.
