Ingredients

Scale
  • 1 large onion, sliced
  • 2 sweet bell peppers (red, orange, green, or yellow), seeded & sliced
  • 23 stalks broccolini, cut into 1.5-inch pieces (or 1 extra sliced onion)
  • 1 tbsp olive oil
  • Large pinch of salt
  • 1 lb sweet Italian sausage (chicken or pork)
  • 1 tbsp white wine vinegar
  • Optional: Sausage buns or orzo for serving

Instructions

  1. Prep Vegetables: In a large bowl, toss onions, peppers, and broccolini with olive oil and salt.
  2. Preheat Air Fryer: With the basket inserted, preheat to 375°F (190°C) for 2-3 minutes.
  3. Cook: Add vegetables to the basket, then layer sausages on top. Air fry for 20-22 minutes, stirring every 5 minutes, until sausages are cooked through and veggies are tender.
  4. Finish: Drizzle with white wine vinegar, toss, and serve on buns, over orzo, or as desired.

Notes

  • Preheat the air fryer for best results (ensures even cooking).
  • Stir every 5 minutes to prevent burning and promote caramelization.
  • Use any color bell peppers for a vibrant mix.
  • Swap broccolini for extra onions or zucchini if preferred.
  • Serve on buns, with orzo, or over rice for a complete meal.
